This Ethiopian coffee is grown in Oromia Guji on a 200-hectare farm at 2000m – 2100m altitude. In 2020, the anaerobic processing method was introduced, where ripe cherries are packed into sealed stainless-steel tanks, creating an oxygen-free environment. During fermentation, CO2 builds up, pushing the mucilage into the beans and enhancing fruity flavours. The process lasts 4-5 days, with temperatures kept below 25°C. Afterwards, the cherries turn yellow and are dried for 15-18 days on African beds in full sun. Tracon supports the farmers with social initiatives, including school programs that provide education and knowledge for a brighter future.
