Environmentally friendly honey processing is rare in Ethiopia. Achieving exceptional complexity with a fuller, creamier mouthfeel and sweetness than natural processed coffees, along with the clarity and flavour of the washed process.
Handpicked ripe cherries delivered to the Tulisi washing station begin the process. After the beans are fermented for 24 hours, the fresh cherry is de-pulped within hours to remove the outer skin while leaving most of the mucilage to dry on the beans. Processed under more shade to slow the drying time up to 18 days until its moisture content reaches 11.5% and produces the red honey results.
