About:
Manos Juntas is a micromill in the Sotará area of Colombia’s Cauca region, where local producers deliver ripe coffee cherries by weight—encouraging selective harvesting and higher quality. Farmers are paid upfront, eliminating the typical 35–40 day wait associated with traditional drying methods. Cherries undergo a five-day anaerobic fermentation in hermetic tanks, each labelled for traceability. Nitrogen is introduced to stimulate yeast activity, while Brix and pH levels are closely monitored to determine the ideal endpoint. Fermentation is halted by lowering the temperature to 20°C, preserving flavour and ensuring microbial stability.
