Origin Story

Farmers are paid upfront, eliminating the typical 35–40 day wait associated with traditional drying methods. Cherries undergo a five-day anaerobic fermentation in hermetic tanks, each labelled for traceability. Nitrogen is introduced to stimulate yeast activity, while Brix and pH levels are closely monitored to determine the ideal endpoint. Fermentation is halted by lowering the temperature to 20°C, preserving flavour and ensuring microbial stability.

Consistency and quality

From origin to roastery, every step is about consistency. Every shipment we receive is cupped and compared against its pre-ship sample to confirm that the coffee matches the quality and profile we expect. It’s a process that demands time and focus, but it’s what ensures every batch of Deluca coffee delivers on flavour and reliability.
Shipping & Dispatch

We offer flat-rate shipping across Australia and free shipping on orders over a certain value (shown at checkout).

  • Parcel Post: $8
  • Express Post: $15

Orders are shipped on Tuesday's and Thursday's.

Orders placed by 2pm on Monday and Wednesday will be shipped next day, otherwise your order will be sent on the next shipping day.

We ship via Australia Post.

Parcel Post usually takes 2 to 4 business days after dispatch.

Express Post usually takes 1 to 2 business days.
