Origin Story

Finca Noruega sits in the cool highlands of Apaneca, a 25-hectare farm founded in 2017 and now part of El Salvador’s Renacer Project, a program dedicated to helping producers elevate coffee quality. The team focuses on understanding their land deeply, using soil studies to guide fertilisation, managing weeds entirely by hand, and protecting more than 10 hectares of forest and biodiversity.
Harvesting runs from January to March, when pickers are trained to select cherries at peak ripeness using Brix measurements. Each lot is then classified for washed, semi-washed, honey, natural or experimental processing. Their Anaerobic Natural lots undergo 72 hours of tightly controlled fermentation, monitored through pH and sugar development, before being pre-dried and moved to raised beds.
At 1,400 masl, the slow, even drying creates exceptionally clean, stable coffees that consistently show clarity, balance, and expressive fruit character, earning the farm multiple Cup of Excellence awards.

Every shipment we receive is cupped and compared against its pre-ship sample to confirm that the coffee matches the quality and profile we expect. It’s a process that demands time and focus, but it’s what ensures every batch of Deluca coffee delivers on flavour and reliability.

Orders are shipped on Tuesday's and Thursday's.

Orders placed by 2pm on Monday and Wednesday will be shipped next day, otherwise your order will be sent on the next shipping day.
