This natural lot from Tatama in Guática, Risaralda delivers a vivid expression of Colombia’s tropical fruit character. Grown at 1,650-1,800 MASL from Castillo and Caturra, ripe cherries undergo an extended, carefully controlled fermentation using only the naturally occurring microorganisms present on the fruit. Slow drying follows to preserve sweetness and clarity. The result is a lush, expressive cup layered with ripe pineapple, vibrant passion fruit and a rich cacao nib finish, bringing together tropical intensity, balanced acidity and lingering chocolate depth.
