About: Santa Maria de Lourdes is managed by Octavio Peralta since 1994, whose didicated to produce exceptional coffee and preseve the natural habitat. This micro lot was carefully hand picked, and taken to the San Ignacio dry mill to undergo a very slow drying process. Dried slowly on raised drying beds with partial shade cover for total 20-24 days to preserve crazy fruitiness and complex acidity.
