This coffee is de-pupled 4 hours after harvested, exposed to a long dry anaerobic fermentation of 30 hours and sun-dried in concrete patios to ideal moisture content. This micro lot is 100% Tabi, newely developed varietal, a cross between Timor hybrid, Bourbon and Typica.
